Introduction
Palm oil is the second largest edible oil in the world after soybean oil, and it is also the cheapest cooking oil in the international market. However, we rarely use cooking in our daily life. The main reason is that palm oil contains a lot of saturated fatty acids, namely palmitic acid and stearic acid, which can reach more than 50% in total, which is harmful to the cardiovascular system. Therefore, if eaten as daily edible oil, the harm to the body can be imagined.

palm oil contains 1% myristic acid, 38% palmitic acid, palmitoleic acid 0.5%, stearic acid 4.5%, oleic acid 44%, linoleic acid 12%. Palm oil is also rich in some bioactive substances, of which carotenoid content is 500~700 mg/kg, so palm oil is deep orange red, and this pigment cannot be effectively removed by alkali refining. Palm oil is rich in vitamin A(500~700 mg/kg), natural vitamin E (tocopherol) and tocotrienol content as high as 600~1000 mg/kg. The chemical structure of tocotrienol (Tocotrienols) is similar to tocopherol. Recent studies have shown that it has superior physiological functions than tocopherol. Because it contains carotenoids and vitamin E, palm oil has a good antioxidant function.

In recent years, some animal studies and human studies have confirmed that pure palm oil has a good effect on controlling blood lipids. Like olive oil, it has the effect of lowering "bad cholesterol" (LDL) and increasing "good cholesterol" (HDL). Some researchers have conducted separate studies on different races (Europe, America, Asia), and the results show that palm oil is an edible vegetable oil that fully meets the needs of human health. In palm oil, the ratio of n-6 /n-3 FA is 20:1 (fish oil is 0.5:1), which can optimize its fatty acid level by adding polyunsaturated fatty acids to palm oil. For example, mixing sunflower oil with palm oil can improve its fatty acid composition. In temperate countries, palm oil will crystallize due to low winter temperatures. Mixing palm oil with vegetable oil with high unsaturated fatty acid content can make the mixed oil more stable at low temperatures (not easy to crystallize), and the mixed oil can be used for a long time Keep clear.
